Food Preservation Techniques Without Power

In times of emergency, power outages can disrupt our modern methods of food preservation. But, as history has shown us, there are several traditional techniques that can help keep food safe and edible without electricity. Practice brings us closer to perfection and should begin before we are in a dire situation needing to preserve food with no power. Here’s a guide to some effective food preservation methods that don’t require power:





Canning

Canning involves sealing food in airtight containers and heating them to destroy microorganisms. There are two main types:

  • Water Bath Canning: Best for high-acid foods like fruits, pickles, and jams. It involves placing jars in boiling water.

  • Pressure Canning: Required for low-acid foods like vegetables, meats, and beans. A pressure canner is used to reach higher temperatures.

  • Canning Jars and Lids: Use jars specifically designed for canning with two-piece lids (a flat lid and a screw band). Ensure lids are new and undamaged.

  • Canners: Use a boiling water bath canner or a pressure canner.


Dehydration

Drying food removes moisture, preventing bacteria growth.

  • Sun Drying: Ideal for hot, dry climates. Fruits, vegetables, and herbs can be placed on racks in direct sunlight.

    • Preparation: Wash and slice fruits or vegetables thinly.

    • Drying: Place the food on screens or racks in direct sunlight. Cover with netting to keep insects away.

    • Duration: Depending on the food and weather conditions, it can take several days to fully dry.

  • Air Drying: Good for herbs and mushrooms. Hang them in a well-ventilated area until dry.

    • Preparation: Clean and dry the herbs or mushrooms.

    • Drying: Tie the herbs into small bundles or hang mushrooms individually in a well-ventilated area.

    • Duration: It can take a few days to a couple of weeks for the food to dry completely.

  • Solar drying uses a solar dehydrator, which is a box with a clear top to trap heat from the sun:

    • Preparation: Prepare the food as you would for sun drying.

    • Drying: Place the food on trays inside the solar dehydrator.

    • Duration: The drying time will vary based on the food and weather conditions, but it's generally faster than traditional sun drying


Fermentation

Fermenting food uses beneficial bacteria to preserve and enhance flavor.

  • Vegetables: Sauerkraut and kimchi are made by fermenting vegetables in saltwater brine.

  • Dairy: Yogurt, kefir, and cheese can be created by allowing milk to ferment.

  • Beverages: Fermenting tea or fruit juice to make kombucha or hard cider.


Smoking

Smoking adds flavor while preserving food.

  • Hot Smoking: Cooks and preserves food simultaneously. Ideal for meats and fish.

  • Cold Smoking: Preserves without cooking. Best for fish, cheese, and cured meats.


Salting and Brining

Salt draws out moisture, creating an environment where bacteria can’t survive.

  • Dry Salting: Packing food in salt. Common for meats and fish.

  • Brining: Soaking food in a saltwater solution. Works well for meats and vegetables.

Root Cellar

Storing vegetables in a cool, dark, and humid environment can keep them fresh for months. If you are unable to dig into the ground, consider building a room out of concrete blocks to achieve similar conditions.

  • Root Vegetables: Potatoes, carrots, and onions are well-suited for root cellaring.

  • Fruits: Apples and pears can also be stored, wrapped individually to prevent bruising.


Pickling

Pickling involves preserving food in vinegar or fermenting in a brine.

  • Vinegar Pickling: Submerging food in vinegar and spices. Great for cucumbers, peppers, and eggs.

  • Lacto-Fermentation: Using natural fermentation to create pickles, sauerkraut, and kimchi.
